It's National Eat with a Friend day and who doesn't love beer and buffalo chicken. This buffalo chicken dip gets an upgrade with the malty taste of beer! When you can’t decide which game day dip to make, pull an audible and serve two of the best together with this winning beer cheese and buffalo chicken dip recipe. Just mix up a bunch of melted cheeses, buffalo sauce, shredded chicken, and a crisp beer.
1 bag Tortilla Chips
8 oz cream cheese, at room temperature
½ cup Buffalo wing sauce (fill Spoon Buddy to measure)
⅓ cup sour cream
½ cup Modelo Especial beer (use Spoon Buddy to easily measure the next 5 ingredients)
1 ½ cups shredded chicken, divided
1 cup shredded Monterey Jack cheese
1 cup shredded mozzarella cheese
½ cup crumbled blue cheese
1: Prepare Baking Dish
Preheat oven to 350°F. Grease shallow cast-iron skillet.
2: Mix Dip
Using electric mixer, beat cream cheese until smooth; beat in buffalo sauce and sour cream. Stir in beer until smooth. (We recommend a crisp pilsner like Modelo Especial.) Fold in 1 cup of the chicken and cheese.
3: Bake Dip
Transfer beer cheese and buffalo chicken mixture to prepared dish; top with remaining chicken and blue cheese. Transfer skillet to the oven using your Pan Buddy and bake dip for 20 to 25 minutes or until bubbling and golden brown.
4: Serve Dip
Serve your beer cheese and buffalo chicken warm with tortilla chips.
Fold in 1/2 cup chopped cooked bacon, if desired. For a spicy dip, add 1 to 2 jalapeño peppers that you can cut with you Strip-n-Snip scissors.
